Our winery was built on a green field or rather the green vineyard and we find it an enormous advantage. After all, we could build everything from the scratch and arrange for the benefit of the wine that is grown there. We could consult the best on what to avoid and where to take on or take off.
You can feel the immediate closeness of the vineyard during degustation taking place in a minimalistic building which was won the award of the Association of Architects of Slovakia for its significant contribution to the architecture of wineries. A man is surrounded by vine of one side and turning around he can see the wine resting in a barrique cellar. This place is mistakenly called a cellar. In fact, the whole building was built in a manner that allows one wine-grower to work there on his own. It is an aboveground building without stairs. The cellar is no exception. Today’s technology is, however, able to simulate the cold and dump cellar conditions
With the white wines we were greatly supported by wine-grower Harald Heiling from Gols Austria. The issues related to red wines were managed by the flying wine-grower Francois-Xavier Gaboryaud.. He also takes care of one winery in the Bordeaux region, Saint Emilion, France and at the same time he manages taking care of wineries in Austria and Turkey.
We had an clear idea of the place for the winery building. In order to keep the post-harvest-quality, the grapes must be processed as soon as possible. Therefore our winery is located directly in the vineyard: the farthest vine root is only a few hundred metres from the press. The grapes are harvested into atypical shallow boxes; it is not transported by a tractor as we want to avoid a very frequent ill phenomenon - oxidation. Our wines are processed and matured directly at the site.
